But wine is just the beginning. The Caucasus Mountains form a wall of ice and granite along Georgia’s northern border, with peaks above 5,000 metres, medieval watchtowers perched on impossible ridges, and the cave city of Vardzia — an entire monastery carved into a cliff face. Tbilisi, the capital, is a ravishing collision of old and new: sulphur bathhouses in the ancient quarter, Art Nouveau facades in the European district, and techno clubs in abandoned Soviet factories. The qvevri method — fermenting wine in large clay vessels buried underground — is a UNESCO-recognized practice still used by hundreds of family winemakers across the Kakheti region. Visit cellars where amber wine (white grapes fermented with skins) has been aged in qvevri for months, developing flavours that no steel tank can replicate. Tour the vineyards of Tsinandali, Mukuzani, and Kindzmarauli. Across the country, ancient churches and monasteries perch on ridges, hilltops, and canyon edges — Jvari, Svetitskhoveli, Alaverdi — each one a masterpiece of Georgian architecture and a living place of worship.
