Georgia is the country that invented wine — literally. Archaeological evidence of 8,000-year-old qvevri (clay vessel) winemaking has been found here, and the tradition continues today in nearly every household across the country. But wine is just the beginning. The Caucasus Mountains form a wall of ice and granite along Georgia’s northern border, with peaks above 5,000 metres, medieval watchtowers perched on impossible ridges, and the cave city of Vardzia — an entire monastery carved into a cliff face. Tbilisi, the capital, is a ravishing collision of old and new: sulphur bathhouses in the ancient quarter, Art Nouveau facades in the European district, and techno clubs in abandoned Soviet factories. The food — khachapuri, khinkali, pkhali, churchkhela — is the most underrated cuisine on earth. And the hospitality is not a marketing slogan; it is a code of honour that considers every guest a gift from God.
