Met at Istanbul Airport and driven into the only city on Earth that stands on two continents. Istanbul has been the capital of the Roman, Byzantine and Ottoman empires under three different names, and it has never once stopped mattering. The evening is yours — walk down to the water and watch the ferries cross to Asia.
Overnight: 4-star hotel.
The old city on foot. The Hippodrome, where Byzantine chariot races drew a hundred thousand people and where an Egyptian obelisk from 1450 BC still stands. Hagia Sophia — a cathedral for 900 years, a mosque for 500, and for a while a museum; its dome was the largest in the world for a millennium and the engineering still isn't fully understood. The Blue Mosque with its twenty thousand İznik tiles. Topkapi, from which the Ottomans ran three continents for four hundred years. You finish in the Grand Bazaar — four thousand shops, sixty streets, roofed and roaring since 1461.

The Spice Bazaar first — saffron, dried figs, Turkish delight, and the smell of the place, which is the point. Then out onto the Bosphorus by boat, the strait that divides Europe from Asia and that every navy in history has wanted. You pass wooden yalı mansions, Ottoman fortresses and the palaces of the last sultans: Dolmabahçe, where 14 tonnes of gold leaf cover the ceilings and Atatürk died in a modest bed, and Beylerbeyi on the Asian shore. Up to Çamlıca Hill for the view back across the whole city.
