7-day Tunisia itinerary
Straight from the airport to Carthage, which is what is left of the city that nearly beat Rome. Hannibal came from here; the Romans razed it in 146 BC, then rebuilt it as their African capital, and the Antonine Baths on the shore were the largest outside Rome itself. Then Sidi Bou Said — blue doors, white walls, bougainvillea, cliffs above the Gulf of Tunis — which is the prettiest village in North Africa and knows it.

The medina of Tunis first — Zitouna Mosque, the souks by trade — then inland to Dougga, which is the best-preserved Roman town in North Africa and one of the best anywhere: a capitol with its columns standing, a theatre for 3,500, temples, a brothel, and a set of communal latrines that people photograph more than the temples. It sits on a hillside above olive groves and there is almost nobody there.

Sbeitla has three Roman temples standing side by side in a row — to Jupiter, Juno and Minerva — which is a configuration that survives almost nowhere else. It was also where the Byzantine governor declared himself emperor in 646 AD, just in time for the Arab armies to arrive. Then south-west to Tozeur and the palm oases.

A long day: the three mountain oases in the morning, then across the white salt crust of the Chott el Jerid, to Douz — the 'gateway to the Sahara', where the dunes actually start — and Matmata's underground Berber houses. Overnight on the coast at Sfax.

North up the coast, stopping at El Jem — the great amphitheatre standing over a small town, the best preserved in Africa — and Sousse, whose medina, ribat and 9th-century Great Mosque are UNESCO-listed. The ribat was a fortified monastery: monks who were also soldiers, watching the sea for Byzantine raiders.

Cap Bon: Nabeul is the pottery town and its Friday market is the biggest in the region; Dar Chaabane is where the stone-carvers work, and you can watch them cut the geometric window frames that end up all over the country. Then back to Tunis.

The Bardo holds the largest collection of Roman mosaics on Earth, in an Ottoman palace — floors lifted from villas all over Roman Africa, including the only known portrait of Virgil made in antiquity.
