9-day Turkey itinerary
A full day in the old city: Hagia Sophia, whose dome held the record for a thousand years; the Blue Mosque and its twenty thousand tiles; Topkapi, from which three continents were ruled; and the Grand Bazaar, roofed and trading since 1461.

Fly south-east to Mardin, and into a different country. Mardin is a honey-coloured stone city stacked up a hillside above the Mesopotamian plain, looking straight out over Syria. Arabic, Kurdish, Turkish and Syriac are all spoken here; Syriac Orthodox monasteries still function in the hills; the architecture is Arab, not Anatolian. Almost no tourists come this far.

To Urfa, which claims to be the birthplace of Abraham and holds Balıklıgöl, the pool of sacred carp where Nimrod's fire is said to have turned to water. But the real reason to come is Göbekli Tepe, half an hour away: a temple complex of carved megaliths built around 9500 BC — seven thousand years before Stonehenge, before pottery, before farming. It rewrote the history of civilisation, and you can stand in it.

Gaziantep is the best place to eat in Turkey and its people will tell you so. It is also home to the Zeugma Mosaic Museum, the largest mosaic museum in the world — Roman floors rescued from a city now underwater behind a dam, including the 'Gypsy Girl', whose eyes follow you across the room and who has become the emblem of the whole region.

Up to Mount Nemrut at 2,150 metres, where a megalomaniac king of Commagene built his own tomb in 62 BC and ringed it with colossal statues of himself seated among the gods. Earthquakes toppled the heads; they now sit on the ground, two metres high, staring out over Anatolia. You go up for sunset or sunrise. It is one of the strangest and most memorable places in Turkey.

Göreme's cave churches and their thousand-year-old Byzantine frescoes; one of the underground cities — Derinkuyu or Kaymaklı — cut eight levels down into the tuff, with ventilation shafts, wells, stables, churches and rolling stone doors, built to hide entire towns from raiders; then the valleys, on foot, at the hour when the light goes gold.
