Met at Istanbul Airport and driven into the only city on Earth that stands on two continents. Istanbul has been the capital of the Roman, Byzantine and Ottoman empires under three different names, and it has never once stopped mattering. The evening is yours — walk down to the water and watch the ferries cross to Asia.

The old city in the morning — Hagia Sophia, the Blue Mosque, Topkapi and the Grand Bazaar — then east out of Istanbul into the forested mountains of Bolu, the green Turkey most visitors never see.

Through Bolu's beech forests to Ankara — the Museum of Anatolian Civilisations, with the finest Hittite collection anywhere, and Anıtkabir, Atatürk's mausoleum — then on into Cappadocia and the cave hotels.

The full day in the valleys. Göreme Open-Air Museum is a UNESCO site: a monastic complex of rock-cut chapels whose Byzantine frescoes have survived a thousand years underground, the colours still startling. You walk through Pasabag — the fairy chimneys of the monks — and Devrent, where the rock has weathered into shapes people insist are animals. Uçhisar Castle is a single enormous rock riddled with tunnels and rooms, and the highest point in Cappadocia. If you are flying in a balloon, it launches at dawn tomorrow — this is the place people come for.

South to Konya, the city of Rumi. The Mevlâna Museum is his tomb and the mother lodge of the Whirling Dervishes, whose turning dance — one hand raised to receive from heaven, one lowered to give to earth — is on the UNESCO list of intangible heritage. Konya is conservative, ancient and largely unvisited. Continue west to Pamukkale.

The travertines at first light, then down to Ephesus — the Library of Celsus, the marble streets, the Great Theatre — and on to the Aegean coast at Kusadasi for the night.

North along the coast to Bursa, the first Ottoman capital, sitting under Mount Uludağ. The Green Mosque and Green Tomb are the finest early-Ottoman buildings in Turkey, all turquoise İznik tile. Bursa is also where the Silk Road ended and where, if you believe the locals, the İskender kebab was invented — try it and decide.
